7-hectare parcel of 85-year-old Gamay on flinty clay-limestone soils in the Touraine (Tue-Boeuf has been purchasing this fruit for many years from a neighbor who is also their source for the Petit Buisson Sauvignon)

Fermentation is 70% destemmed

15% Chardonnay

then Riesling was crushed and destemmed on top and maceration continued for 2 additional weeks

2022 The Set PTG, St. Rita Hills, USA #ilparadisodimanfredi The three varieties are farmedWINEMAKING: The cuve is a 50 50 blend of Pinot Noir and Gamay Noir. The Gamay was fermented in concrete, with 100% use of whole clusters, and raised for 7 months in neutral oak barrels. The Pinot Noir was fermented completely destemmed in concrete, and also raised in neutral French oak. Blending occurred after levage as the wines were racked into stainless steel to rest for one month before bottling. VINTAGE NOTES: A heatwave at the start of September
