Domaine Saint-Cyr VdF Alien Blanc 2023 SP051726 Beuer and Spottswoode's version has agedTwo thousand bottles, ninety year old vines, and no sulfur at any point: Alien is Raphael Saint Cyr's outlier, and he named it accordingly. It's Aligote, Burgundy's overlooked white grape, growing on clay in the Beaujolais and treated with unusual patience. The juice is pressed straight into old barrels without settling, ferments on wild yeasts, and then sits two full years on its lees in a reductive environment before bottling unfiltered. That long,
