NV Gallois-Bouché “Préface” Brut Champagne, France COS blended and aged for anGuillaume Gallois works full time at Bollinger and has only just begun to make and commercialize his own wines from his own vines. His non vintage Brut bottling of Prface is made from a cpages of sixty percent chardonnay and forty percent pinot noir grown in Vertus. This release is from the base year of 2022, but Guillaume decided to use fifty percent reserve wines for this release from the perpetual reserve solera he started for this cuve in 2015.
